Jedediah’s Birth Story
#7 Our beautiful Jedediah Issachar. The LORD has indeed blessed us again with a wonderful homebirth, a healthy baby, and a healthy momma.
After my last birth with Timothy, I felt I was weak. I guess I had taken for granted the success I had with the first two births. I had gotten older of course and the homestead had been in transition mode.
Our home was on the market and we’d sold all our farm animals. In doing this, chores were at a minimum. Mowing the grass and cleaning house was all that was left.
So, the moment I found out I was pregnant I knew things had to change. I started walking more and did an excessive number of daily squats. Mega doses of vitamin C, dates, pregnancy teas, gallons of water and just really tried to focus on being more active.
In February, we found out we were having another boy. We were blessed!
Then came June, I knew we had to be getting close, but I had no signs anything was happening soon.
June 21st, I was mowing the grass. I took a break to go potty when I lost my mucus plug. I went back out to finish the grass when I had my oldest daughter take over for me. I was starting to feel slight contractions. They weren’t painful, just tightening in the abdomen. This continued throughout the day, no pattern, just sporadic.
My husband went to bed around 8pm, and I followed shortly after. I was too nervous and excited to sleep. I could feel every little tightening.
It was 11:11pm when they started to strengthen.
Next 12:21am, Contraction.
1:06am, Contraction.
1:19am, Contraction.
1:26am, I got out of bed to move around.
1:39am, I started losing darker mucus.
1:47am, Contraction.
1:50am, I decided it was time to wake up my husband.
2:10am, I showered while having a few contractions.
2:50am, They were getting stronger.
3:03am, Another contraction.
3:20am – 4:30am I laid down to rest but continued to have a few contractions.
5:00am, They continued to get stronger.
5:10am – 5:50am, Same
5:50am, 6:05am, 6:10am, 6:38am, 6:48am, 7:15am, 8:28am, 9:22am, 9:29am, 10:00am, 10:07am, Same
10:17am, My water broke.
10:29am, I had another contraction and began to push.
Jedediah was born at 12:37pm!
Glory be to GOD!
My baby was so perfect, he nursed immediately while I delivered the placenta. My husband and oldest daughter took care of baby Jed while I showered and introduced him to the rest of his siblings. He is so loved!
We praise God for allowing us to have another blessed delivery. We praise God for a healthy baby and healthy momma!
Banana Bread
Ingredients:
½ cup butter
½ cup sugar
¼ cup honey
4 ripe bananas
½ cup sour cream
1 tsp baking powder
1 tsp vanilla
1 cup of nuts (optional)
Instructions:
1. Cream together the butter and sugar. Add honey.
2. Crush the bananas in a separate bowl. Then add the bananas, eggs and vanilla to the creamed sugar and honey.
3. In a separate bowl mix the flour and baking powder.
4. Add the dry ingredients to the wet, alternating with sour cream, mix until combined. Fold in nuts if using.
5. Pour into a greased loaf pan.
6. Bake at 350 for 1 hour. Makes 1 loaf.
Crockpot Meatloaf
Ingredients:
1lb ground beef
2 eggs
1 small onion, chopped
1 cup breadcrumbs
1 cup parmesan cheese
½ cup mushrooms, chopped
½ cup sour cream
2 tsp salt
1 tbsp Italian seasoning
1 tsp pepper
½ cup ketchup, for glaze
Directions:
1. In a large bowl combine all the ingredients.
2. Shape into a loaf.
3. Place the meatloaf in a crockpot, smother with ketchup and close the lid.
4. Cook on Low for 6 hours or High for 3 hours.
Our Visit To Polyface Farm
There was no way we could leave the East Coast without visiting Polyface Farm.
A few years after beginning our Healthy Life, Healthy Food Journey, we came across the Lunatic Farmer, Joel Salatin. He was doing everything we wanted to do and so much more.
His passion for respecting and caring for all God’s creation, “healing the land, one bite at a time” was inspiring! Over the years we had talked about visiting many times but never made the trip.
So here we are with just few weeks left before finally moving West and we couldn’t leave without seeing it. Polyface Farm, the farm of many faces, just a 5 hour drive away.
Was it everything we imagined?
Absolutely. It was Beautiful!
At Polyface, the Salatins have an open door policy. Anyone can come anytime and no place is off limits (besides their home).
Once we arrived, we had a short visit in the store then started our self-guided tour. We were awkwardly free to explore Polyface. The farm was busy but peaceful. We walked around for hours admiring the simple beauty.
It was a blessing to see this place in person.
Layered Potato & Squash Au Gratin
Ingredients:
4-6 medium potatoes, thinly sliced
1 medium yellow squash, shredded
2 green onions, chopped
1 cup parmesan cheese
1 cup shredded cheddar cheese
salt & pepper
Directions:
1. Preheat oven to 425. Lightly oil bottom of a casserole dish.
2. Line bottom of dish with a layer of potatoes.
3. Next layer with shredded squash.
4. Sprinkle with 1 chopped green onion.
5. Add a layer of 1/2 cup shredded cheddar and 1/2 cup of parmesan cheese.
6. Repeat layers beginning with potatoes and ending with cheese. Top with a sprinkle of salt and pepper.
7. Bake covered for 15 minutes, uncovered for an additional 10 minutes.
8. Broil on low for 5 minutes or until golden brown on top.
